Raymond Saja joins Karma Resorts as Executive Chef direct from Hotel Plaza Athenee in New York City where he led the culinary team for the last four years. Major Elements of Karma Resorts philosophies are 'choice' and 'variety' and Raymond Saja and his team of chefs follow through with this in both cuisine, beverage and dining options.

Raymond believes in maintaining purity and freshness through the use of the finest seasonal local and international ingredients, interspersed with foods and flavors from around the globe.
di Mare Restaurant and Lounge Hugging the azure pool at the heart of the resort, di Mare Restaurant and Lounge has gained a reputation of providing some of the best dishes in both Jimbaran and Bali.

The use of fresh Balinese produce infused with daily imports of international ingredients enhance the Modern Mediterranean flavors of di Mare Restaurant and Lounge. A modern interpretation of a number of classical dishes alongside a selection of "new age" ideas is evident in dishes such as "Jimbaran Bay Red Snapper "Escabeche"- Preserved Lemon, Cured Tomatoes, Parsley and Basil Coulis" and "Cumin-braised Grouper - Herb Crust, Roasted Eggplant-potato puree, ligurian olive sauce, chorizo oil".
